King Salmon with Rocket Salad for 3-4 People

  • 3-4 fillets of Pure Pasture Farms King Salmon
  • 6-8 cups fresh rocket (arugula) leaves
  • 2 medium red bell peppers, thinly sliced
  • 1/4 cup capers, drained
  • Fresh parsley, finely chopped for garnish
  • 2 lemons: one thinly sliced for garnish, one for juicing
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preparation of King Salmon:
    • Preheat your oven to 375°F (190°C).
    • Pat the salmon fillets dry using paper towels. Season both sides of each fillet with salt and pepper.
    • In a large non-stick skillet over medium-high heat, add two tablespoons of olive oil. Once hot, place the salmon fillets skin-side down, ensuring they're not overcrowded. Cook for about 3 minutes until the skin becomes crispy.
    • Gently flip the salmon fillets and sear the other side for another 2 minutes.
    • Transfer the salmon fillets to a baking dish and place them in the oven. Roast for 6-8 minutes or until the salmon flakes easily with a fork. The center should still be slightly pink.
  2. Rocket Salad Preparation:
    • In a large mixing bowl, toss together the rocket leaves and red bell pepper slices.
    • In a separate bowl, whisk together the remaining olive oil, juice from one lemon, salt, and pepper to create a simple dressing.
    • Drizzle the dressing over the rocket and red bell pepper mixture, tossing gently to combine.
  3. Serving the Dish:
    • On each plate, place a generous serving of the rocket salad.
    • Gently lay a roasted King Salmon fillet atop the salad on each plate.
    • Sprinkle each dish with capers and freshly chopped parsley.
    • Garnish with lemon slices and an additional sprinkle of black pepper if desired.
