Melissa's Meatloaf (with a twist)
A hearty, flavor-packed meatloaf made with a blend of ground lamb and ground chuck, finished with a sweet and smoky glaze that caramelizes beautifully on top. Travis especially loves it when the edges get perfectly caramelized straight out of the oven. For the Meatloaf

  • 1 lb ground lamb

  • 1 lb ground chuck

  • 1/4 onion, finely chopped

  • 1 egg

  • 1 cup breadcrumbs or panko

  • 1/2 cup ketchup

  • 1/2 cup BBQ sauce

  • 2 tsp chopped jalapeño (optional)

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • Salt and pepper to taste

For the Glaze

  • 1/2 cup ketchup

  • 1/2 cup BBQ sauce

Recipe Steps

  1. Preheat oven to 375°F.

  2. In a large bowl, combine ground lamb, ground chuck, chopped onion, egg, breadcrumbs, ketchup, BBQ sauce, jalapeño (if using), onion powder, garlic powder, salt, and pepper. Mix until just combined. Do not overwork.

  3. Shape into a loaf form and use a 13×9 baking dish or roasting pan.

  4. Cover with foil and bake for 30 minutes.

  5. Mix together 1/2 cup ketchup and 1/2 cup BBQ sauce. Remove meatloaf from oven and spread glaze evenly over the top.

  6. Return to oven uncovered and bake an additional 20–30 minutes, or until internal temperature reaches 165°F.

  7. Broil on high for 2–4 minutes until the top is caramelized. Watch closely.

  8. Let rest 10 minutes before slicing and serving.
