  • 2 black cod fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 tablespoon sake
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil

Instructions:

  1. Marinate the Cod:
    • In a small bowl, mix soy sauce, mirin, sake, sugar, garlic, and ginger.
    • Place the cod fillets in a shallow dish and pour the marinade over them. Ensure both sides are coated.
    • Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  2. Prepare the Grill:
    • Preheat your grill to medium-high heat.
    • Brush the grill grates with vegetable oil to prevent sticking.
  3. Grill the Cod:
    • Remove the cod from the marinade, letting excess drip off. Reserve the marinade for basting.
    • Place the cod on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Baste occasionally with the reserved marinade during cooking.
