Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).
Prepare the chicken: Remove any giblets, pat the chicken dry, and season the cavity with salt and pepper. Optionally, stuff with lemon halves and garlic cloves.
Rub the chicken thoroughly with the softened rosemary-infused beef tallow, ensuring even coverage for optimal flavor and crispiness.
Truss the chicken by tying the legs together and tucking the wing tips under the body. Place it in a roasting pan, optionally on a bed of sliced onions.
Roast slowly: Place the chicken in the oven and roast slowly at 325 degrees Fahrenheit for about 1.5 hours. This lower temperature allows the chicken to cook evenly and remain juicy.
Increase heat for crispy skin: To finish, increase the oven temperature to 425 degrees Fahrenheit (220 degrees Celsius) for the last 10-15 minutes of cooking. This will help the skin become crispy and golden.
Check for doneness: Ensure the chicken is fully cooked by checking that the juices run clear when you cut between a leg and thigh, and the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
Let it rest: Allow the chicken to rest for 10-15 minutes before carving. This helps the juices redistribute throughout the meat, enhancing flavor and tenderness.

Tips for Best Results:
Basting: Baste the chicken periodically with the drippings and tallow in the pan. This not only adds flavor but helps keep the chicken moist during the slow roasting phase.
Vegetables: For an all-in-one meal, add root vegetables around the chicken during the last hour of roasting. They will cook in the flavorful fat and juices released by the chicken.
This method combines slow roasting to keep the chicken tender and juicy, with a high-heat finish to achieve the desired crispiness of the skin.
