Ingredients:

  • 1 Pure Pastures Lamb Rack (about 7 to 8 ribs)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup white wine (optional)

For the Side:

  • Mashed potatoes, prepared from scratch
  • Sautéed seasonal vegetables or a fresh herb salad

Instructions:

  1. Preparation:
    • Preheat your oven to 400°F (200°C).
    • Pat the lamb rack dry with paper towels. This helps to get a nice crust on the lamb when searing.
  2. Seasoning:
    • In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a herb paste.
    • Rub the herb paste all over the lamb rack, ensuring it is evenly coated.
  3. Searing:
    • Heat a skillet over high heat. Once hot, add the lamb rack, fat side down, and sear until golden brown, about 2-3 minutes on each side.
  4. Roasting:
    • Transfer the lamb rack to a roasting pan, fat side up. If you have a wire rack, use it to elevate the lamb for an even roast.
    • Roast in the preheated oven for about 15 to 25 minutes, depending on how well done you prefer your lamb. An internal temperature of 135°F (57°C) will give you a medium-rare finish.
  5. Resting:
    • Once cooked to your desired doneness, remove the lamb from the oven and let it rest for at least 10 minutes before carving. This allows the juices to redistribute throughout the meat, ensuring it will be moist and tender.
  6. Carving:
    • Carve the rack into individual chops by slicing between the bones. Serve two to three chops per person.
  7. Serving:

  8. Deglazing (Optional):
