- 1 Pure Pastures Lamb Rack (about 7 to 8 ribs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- Salt and freshly ground black pepper, to taste
- 1/2 cup white wine (optional)

Instructions:
- Preparation:
- Preheat your oven to 400°F (200°C).
- Pat the lamb rack dry with paper towels. This helps to get a nice crust on the lamb when searing.
- Seasoning:
- In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a herb paste.
- Rub the herb paste all over the lamb rack, ensuring it is evenly coated.
- Searing:
