Here's a recipe for Authentic Butter Chicken using Pure Pasture Farms Chicken and our 100% grass-fed butter. This recipe serves 5 to 6.

Ingredients:

1. 2 packs of Pure Pasture Farms boneless, skinless chicken leg & thigh packs

2. 3 tablespoons Pure Pasture Farms 100% grass-fed butter

3. 1 large onion, finely chopped

4. 3 garlic cloves, minced

5. 1 tablespoon grated fresh ginger

6. 2 teaspoons garam masala

7. 1 teaspoon turmeric

8. 1 teaspoon ground cumin

9. 1 teaspoon ground coriander

10. 1/2 teaspoon cayenne pepper (adjust to taste)

11. 1 can (14 oz) crushed tomatoes

12. 1 cup heavy cream

13. Salt, to taste

14. Fresh cilantro leaves, for garnish

15. Basmati rice, for serving

16. Naan bread, for serving

Instructions:

1. Cut the chicken into bite-sized pieces as needed and season with a pinch of salt.

2. Melt 1 tablespoon of Pure Pasture Farms butter in a large pan over medium heat. Add the chicken pieces and cook until they are lightly browned on all sides, about 7-8 minutes. Remove the chicken from the pan and set it aside.

3. In the same pan, add another tablespoon of butter. Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes.

4. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

5. Add the garam masala, turmeric, ground cumin, ground coriander, and cayenne pepper to the pan. Stir well to mix the spices with the onions, garlic, and ginger. Cook for about 2 minutes.

6. Stir in the crushed tomatoes, scraping the bottom of the pan to release any bits that have stuck to it. Let the mixture simmer for about 10 minutes.

7. Return the chicken to the pan, mixing well so that it's coated with the tomato and spice mixture. Let it simmer for another 10-15 minutes, or until the chicken is fully cooked.

8. Stir in the heavy cream and the remaining tablespoon of butter. Let the mixture simmer for another 5 minutes. Taste and add salt if needed.

9. Serve the butter chicken over basmati rice, garnished with fresh cilantro leaves. Naan bread on the side is a traditional accompaniment and is perfect for soaking up the creamy sauce.
