Pure Pasture Beef Shank Osso Buco with Garlic, Rosemary, and Dried Fruits

Ingredients:

  • 4 Pure Pasture Farms beef shanks, cross-cut (about 1 to 1 1/2 inches thick)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 large onion, finely chopped
  • 1 cup dry white wine (or beef broth for a non-alcoholic version)
  • 2 cups beef stock (preferably organic)
  • 2 tablespoons tomato paste
  • 4 sprigs of fresh rosemary
  • 1/2 cup mixed dried fruits (such as apricots, prunes, or raisins)
  • Zest of 1 lemon (optional)

Instructions:

  1. Prepare the Beef Shanks: Season the beef shanks with salt and pepper on both sides.
  2. Brown the Shanks: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef shanks and sear until browned on both sides, about 3-4 minutes per side. Transfer the shanks to a plate and set aside.
